Ingredients:
12 tbsp unsalted butter (cold)
260g all purpose flour
4 tbsp corn flour
cold water
salt
3 egg yolk
260ml milk
vanilla essence
4 tbsp coconut sugar
7 tbsp brown sugar
1 cinnamon stick (small)
1 slice lemon
2 apples
Pastry dough
In a bowl incorporate 260g of all purpose flour, a pinch of salt and 3 tbsp of corn flour. Add 11 tbsp of cold butter and a little bit of cold water. Do not add a lot of water at once we do not want a runny dough, the butter will be enough for the dough to form, but we just need a little bit of water to add moisture. So start kneading the dough nicely until you form a soft play dough like texture. Then wrap the dough in a cling film and pop it in the fridge.
Custard
In a saucepan start heating 260 ml of milk with a dash of vanilla to it. Keep it on a medium low while we work on the egg mixture. In a bowl take 3 egg yolks, add 4 tbsp of coconut sugar and 2 tbsp of brown sugar. I chose this combination of sugar so that the custard is light sweet from the coconut sugar with a caramelised flavour from the brown sugar. Whisk the mixture well to get a light yellow batter. Then add 1 tbsp of corn flour and mix it together. By now the milk has probably reached its boiling point. Now take the milk off of heat and slowly add it to the egg mixture, a little by little while constantly whisking. then add the whole egg-milk mixture back into the saucepan and heat it in a low heat while stirring constantly. Stop when the mixture is near thickening point. Leave the custard aside to cool.
Caramelised apple
Peel the apples and slice them or cut them evenly (however you prefer). Now, in a saucepan add 5 tbsp of brown sugar along with 3 tbsp of water. Turn the heat on to low. Then add 1 tbsp of butter,a dash of vanilla, a small cinnamon stick and the apples. Mix them well together and let the sauce thicken. Meanwhile squeeze a slice of lemon into the sauce. Keep stirring or the sugar may harden in the bottom. When the apples look brown and a thick sauce is formed, take the mixture off of heat.
Let's bake it and eat it!
Take your dough out of the fridge and give it a nice kneading for 2 minutes. Then roll it out evenly into a big circle (bigger than your dish). Take your pie/tart dish (preferably used to bake a pie) and lay the rolled out dough on top of it. Press the dough down onto the bottom and sides of the dish, and cut off the excess.
Now take the custard and evenly pour it on the dough layered dish and on top of it pour the caramelised apples evenly. For the top crust roll out the rest of the remaining dough. Cut out long strips of the dough and just place them on top of the applesauce layer in whatever design you prefer.
Pop the dish into a preheated oven for 30 minutes at 190 degree celsius. And that's it! enjoy some warm apple pie with a scoop of ice cream and that will make your meal delightful.
